The Food Processing Laboratory integrates food physics with innovative green processing technologies to improve energy efficiency, enhance nutritional quality, and reduce environmental impact. Working in close synergy with the pilot plant and food chemistry laboratories.
Technology platform and methods
The laboratory supports research into methods such as pulsed electric fields (PEF), ohmic heating, ultrasound, blue light and electrohydrodynamic processing. These techniques enable the development of sustainable food formulations and production systems.
