Production of Danbo cheese can be accelerated with a new solution

Today, a Danish Danbo cheese takes at least a month to mature at the dairy. Researchers from DTU National Food Institute have developed a new method that can reduce ripening time by 3-4 weeks, thus making the production faster, cheaper and more sustainable.
