Over the course of three days, we invite you into a world of food research, curiosity and experimentation. Peer at mycelium through a microscope, discover new protein sources, meet algae growing in a bioreactor and taste popcorn coloured blue with spirulina. You can also share your thoughts on seaweed and other ingredients that may play a much larger role in what we eat in the future.
Behind the tastings and demonstrations lie some very real questions. How do we reduce food waste? How can we produce food safely and sustainably for a growing population? Could edible packaging help cut down on plastic waste? And what happens when entirely new food solutions move from the research lab into everyday life?
Throughout the festival, you can meet researchers and students from the DTU National Food Institute and learn more about the science behind food, health and sustainability - and about the people working to shape the future of food systems. Through our educational activities, you can also explore different paths into the field and get a sense of what it is like to study and work with food science and technology.
Most activities will take place at our stand by Kirkepladsen and during sessions at the Circular Stage on Friday at 4 pm. Some are short talks, others are tastings, conversations and hands-on experiences.
