PhD Defence on the optimisation of industrial baking processes

The National Food Institute, Technical University of Denmark invites to Mette Stenby Andresen’s PhD defence on a new mathematical model for optimizing industrial baking processes. The defence takes place 15 August 2013 at 13.00.

Denmark has a large industrial production of baking products. The turnover of the largest producer of cakes, cookies and biscuits was above 700 million DKK in 2010. It is a big challenge to obtain detailed experimental data from industrial ovens to use in the optimisation of industrial baking processes.

Mette Stenby Andresen from the National Food Institute has in her PhD project designed and constructed a unique pilot-scale oven to simulate baking in continuous tunnel ovens which is the kind of ovens used by the industry. In the oven it is possible to study the product both visually and through continuous measurements throughout the entire baking process. The pilot-scale oven was used to run systematic measurements which were afterwards included in the validation and optimisation of a physical-mathematical model. The model describes how a product is heated and dried during baking.
